The majority of coffee in Bali is wet processed, as directed by the Balinese government, which is working to increase coffee exports. After cherries are harvested and sorted, they are depulped and fermented overnight. The remaining mucilage is washed off the seeds and laid on patios the next day.
We have been pleasantly surprised by this coffee. We don't get many opportunities to try coffees from Bali, so when this coffee became available we were really excited to give it a try! The cup presents a nice amount acidity and very clean cup overall. We are also offering the Natural Process of this coffee, so if you get the chance to try them side by side you can see how much the processing method plays a role in the final cup of coffee.
