Notes of Blackberry and Red Wine
Our newest Special Special blew us away on the cupping table. This coffee comes from the Ahuachapan region in the Northwest corner of El Salvador. It is grown on Finca Himalaya, a 60-hectare farm owned by Mauricio A. Salaverria. The Honey processed coffee on Mauricio's farm is picked ripe and dry fermented for 20 hours and then dried on raised beds for 23 to 25 days. The volcanic soil and use of shade create a very hospitable environment for the coffee. This region is often considered the first place in El Salvador where coffee cultivation expanded in the mid-nineteenth century.
