We're tasting notes of Lemon Meringue Pie and Gin & Tonic.Colombia, Maca is a new offering to Dogwood, and we couldn't be more excited about this coffee. Serving as our one-and-only Anaerobic Process offering, the Maca is a fantastic addition to our lineup of unique coffee offerings. Maca's unique flavor comes from the processing it goes under in Colombia at El Tío Conejo's processing station. This anaerobic processed coffee is made clean with Ozone gas and UV lights. The coffee cherries are then pulped and deposited inside a Bioreactor to begin the fermentation process. The fermentation is controlled by eliminating the presence of oxygen in the tanks. From there, the mass is inoculated with a specific variety of yeast which aids the fermentation. After 36 hours of action, the coffee beans are extracted from the tanks, washed and then dried before export. This unique processing yields to a very delicate and extremely complex cup of coffee. Maca lends bright notes of Lemon Meringue Pie, Gin & Tonic, Green Apple, and Jasmine Tea.
